in case you are looking for something special.

Coconut Cranberry Chews
(The cookies on the left)
About 1 ½ cups of butter, at room temperature
2 cups sugar
1 tablespoon grated orange peel
2 teaspoons Vanilla
3 ¼ cups all purpose flour
1 teaspoon baking powder
¼ teaspoon salt
1 ½ cups dried cranberries (I only put in about a cup)
1 ½ cups sweetened dried coconut flakes (I only put in about a cup)
In a large bowl, with a mixer on medium speed, beat 1 ½ cups butter, sugar, orange peel and Vanilla until smooth.
In a medium bowl, mix flour, baking powder, and salt. Add to butter mixture, stir to mix, and then beat on low speed until dough comes together, about five minutes. Mix in cranberries. (The mixture will look dry until it comes together as dough, if it is too crumbly to form into balls, the dough needs to be mixed longer. It should be a smooth mass.)
Shape dough into 1 inch balls and place about 2 inches apart on a buttered 12x15inch baking sheet.
Bake at 350 degrees until cookie edges just begin to brown, about 8-11 minutes. A shorter cooking time will make chewier cookies, a longer baking time will yield a crispier cookie. Let cool 5 minutes.

ReplyDeleteHere is the real recipe that I submitted to Sunset. They changed it, taking out half the salt, which was meager to begin with, but needed to blend the flavors. They took the orange oil out saying it was hard to find. And they took out the shortening. But I argued with them saying that most people don't know how to measure flour. Oh well. I baked their version of my recipe and mine side by side and had 11 people blind taste them and everyone liked my original better. So I give it to everyone.
I'm glad you like them. I still do. I'm having a cookie party today and they are one batch of many I baked.
Coconut Cranberry Christmas Chews
3 1/4 C. unsifted flour
1 t. baking powder
1 t. baking soda
1/2 t. salt
1 1/2 C sweetened flaked coconut
1 1/2 C.dried cranberries (these can be left whole or chopped)
2 t. vanilla
2 t fresh grated orange rind
3/4 t. orange oil
2 C sugar
1 1/2 c. softened butter
1/2 c. Crisco shortening
In a mixer beat butter, shortening, sugar, orange peel, orange and vanilla extracts until light and fluffy. Meanwhile combine flour, salt, soda and baking powder. At low speed mix in flour until blended. Add cranberries and coconut and mix until blended.
Roll into 1 inch balls and place on ungreased cookie sheet. Bake 8-10 minutes at 350 degrees until just barely turning brown. If you overbake they will be crunchy. Watch carefully. Cool on cookie sheet for at least 5 minutes then remove to rack to cool completely.
